Ingredients
Skin-on chicken breasts or thighs
2 T olive oil
Juice of 1 lemon
Mix of herbs and spices - rosemary, thyme, oregano, marjoram, garlic
Directions
Preheat oven to 450'. Set a cast-iron skillet over medium-high heat. In a large bowl, mix together olive oil, lemon juice, and flavourings. Toss chicken pieces in the bowl until well-coated. Place in skillet skin-side down and cook, undisturbed, for 3 minutes or until a nice golden colour has developed on the skin. Turn chicken over and cook in the oven for 15-30 minutes, depending on size of pieces.

Mexican Spice Mix
Ingredients
1 T chili powder
1 t ground cumin
1 t paprika
1 t garlic powder
1/2 t oregano
1/2 t onion salt
1/4 t salt
1/4 t black pepper

Measure spices into empty spice jar; shake thoroughly. Makes enough to season 1 lb of meat.

GF Chocolate Cake
Ingredients
265g GF flour
50g cocoa powder
1/2 t xanthan gum
1 1/2 t baking soda
1 1/2 t baking powder
1/2 t salt
300g sugar
1 cup warm milk
2 eggs, room temperature
1/2 cup vegetable oil
1 cup boiling water
Directions
Preheat the oven to 350' and line two round cake pans with parchment. Whisk together dry ingredients in a large bowl. In a medium bowl, whisk together milk, eggs, and oil until well-blended; whisk into dry ingredients. Whisk in boiling water until well blended, and pour evenly into cake pans. Bake for 30 minutes and check for doneness; may need 5-10 more minutes.
Prepare the frosting: beat 3 sticks of butter in Mixmaster until light and fluffy. Meanwhile, whisk together 250g powdered sugar, 75g cocoa powder, and a pinch of table salt. Add dry ingredients to butter and continue beating until evenly distributed in buttercream. Melt 150g dark chocolate and beat in to frosting. Assemble cake and enjoy!

1 cup dried fruit, chocolate chips, or a combination thereof

Preheat oven to 350 degrees. In medium bowl, whisk together first five dry ingredients, then whisk in rolled oats. Using Mixmaster, cream together butter and sugar, then mix in egg and vanilla. Blend in dry ingredients, then stir in fruit and/or chocolate. Bake for 10-12 minutes.

65 grams white sugar
1 large egg
2 T milk
1 T vanilla
1 bag chocolate chunks
(sea salt)

In large round pyrex, melt butter. In medium bowl, whisk together dry ingredients. Whisk sugars, egg, milk, and vanilla into butter. Whisk dry into wet; stir in chunks. Chill at least 30 minutes, preferably hours or overnight. Preheat oven to 375'. Scoop 2T portions onto parchment, sprinkle with sea salt if desired, and bake for 10-12 minutes, rotating halfway through.
