Southwestern Grilled Chicken Salad

Ingredients

Boneless, skinless chicken breasts, sliced in half laterally
1/2 T chili powder
1 t brown sugar
1/2 t cumin
1/2 t coriander
salt & pepper

6 T olive oil
2 T + 2 t lime juice
1 T chopped cilantro
2 t honey
1/2 t salt
pepper
a few shakes of green Tabasco (optional)

1 cup canned black beans
cherry tomatoes, halved
1 or more scallions, sliced thinly
corn
lettuce
2 t chopped cilantro

Directions

Mix spices in first group of ingredients and rub on chicken breasts. Grill at medium-high for about 3 minutes a side. Let rest while you:

Thoroughly mix ingredients in second group and:

Combine ingredients in third group. Slice chicken, place on top of salad, and dress.
