Ingredients
6 chicken breasts, cut in half laterally
4 cups panko
1/4 cup EVOO
1 t kosher salt
4 eggs
1/3 cup flour
Directions
Preheat oven to 350'. Whisk panko with EVOO and salt. Spread panko over parchment-lined baking sheet and cook for 12 minutes, stirring twice.
Increase oven temperature to 400'. Dip chicken pieces in flour, then egg, then panko. Arrange on parchment-lined baking sheet. Bake for 12 minutes, flipping once.
Note: chicken pieces may be frozen before baking. If frozen, bake for 15 minutes.
