Cauliflower Tots

Ingredients

2 cups grated cauliflower
1/4 cup nutritional yeast
1 egg
1/4t garlic powder
1/4t salt

Directions

Preheat oven to 400'. Thoroughly mix all ingredients, then form into small balls/tots. Place on a parchment-lined baking sheet and bake for 15 minutes. Pan-fry until crispy and golden on all sides.

Simple Brownie Recipe to try

2 cups sugar creamed with 1/2 cup butter, 3 eggs beaten in one at a time, 1tbsp vanilla, 1 cup ATK flour, 1 cup cocoa. Bake at 350° for 20-25 mins. Top with chopped chocolate, wafers, or chocolate chips when hot. Smooth. Add sea salt.

Lady Kingsmill Relish

Ingredients

4 cups cucumbers, diced
4 cups onions, diced
4 cups tomatoes, diced
2 bell peppers, diced
3 cups white sugar
2 cups white vinegar (reserve .5 cup)
1 tsp salt
1 tsp celery seed
1.5 tsp turmeric
1.5 tsp dry mustard

Directions

Sprinkle the cucumbers and onions with salt and let stand one hour. Drain excess liquid and add remaining ingredients. Bring to a boil, then simmer for about 30 minutes. Mix remaining half cup of vinegar with cornstarch and add to the relish; cook another 5 minutes.

GF Gingerbread Bundt Cake

Ingredients

1/2 cup butter, melted
1/2 cup brown sugar
1 cup molasses
1/2 cup applesauce
2 eggs
1 1/4 cup milk

2 cups GF flour
1T psyllium
1t xanthan gum
2t baking powder
1t baking soda
1/2t fine salt
2t cinnamon
1 1/2t ginger
1/2t allspice
1/4t cloves

Directions

Preheat oven to 325'. Use the Mixmaster to blend the wet ingredients; add dry ingredients and stir until well-blended. Pour into a greased Bundt pan. Bake for 1 hour.

Easy Dark Chocolate Fudge

Ingredients

2 bars baking chocolate
1 can sweetened condensed milk
1 stick butter
1/2 teaspoon vanilla
1/4 teaspoon salt

Directions

Over low heat (3-4 on our induction range), melt the chocolate, condensed milk, and butter. Stir in vanilla and salt, then scoop onto parchment paper. Allow to cool to room temperature, then move to fridge for another 2-3 hours.

Easy GF Banana Bread

Ingredients

3-4 Overripe bananas
1/4 + 1/4 cup melted butter
1/3 cup honey
1 egg
1 t vanilla

230g (1 3/4 cup) oat flour
1 t baking powder
1 t baking soda
1/2 t kosher salt
1 T psyllium fibre

Directions

Preheat oven to 350'. Brush loaf pan with 1/4 cup melted butter. Mix together wet ingredients, making sure to thoroughly squish bananas. Add dry ingredients and mix until well-blended. Pour into prepared loaf pan and bake for 40 minutes.

small container of sour cream
juice of one lime
1/4 cup cilantro leaves
1/4 t sugar
1/4 t garlic powder

Directions

Mix with immersion blender & serve.
