Cuddy Family Beef Vegetable Soup

Ingredients

4 cups vegetable, beef, or chicken stock
2-4 ribs celery, diced
1 medium onion, diced
2-3 carrots, shredded
1 lb ground beef
1 can crushed tomatoes
1t kosher salt
Bay leaves
Tiny pasta, sorghum, buckwheat, or brown rice as preferred

Directions

Saute onion and celery until soft. Transfer to stock pot with shredded carrot, bay leaves, salt, tomatoes, and stock. Brown ground beef and add to pot. Bring to a boil, then simmer for a while - the flavours improve with time. Serve with grain of your choice and/or fresh bread.

Greek Pork Tenderloin

Ingredients

3T lemon juice
1/4 cup olive oil
2T minced fresh oregano
1 garlic clove, pressed
1-2 pork tenderloins
Thick slices of sweet onion


Directions

Mix marinade well; add pork and onions and turn to coat. Leave to marinate for an hour or so. Grill.
