Ingredients
4 cups vegetable, beef, or chicken stock
2-4 ribs celery, diced
1 medium onion, diced
2-3 carrots, shredded
1 lb ground beef
1 can crushed tomatoes
1t kosher salt
Bay leaves
Tiny pasta, sorghum, buckwheat, or brown rice as preferred
Directions
Saute onion and celery until soft. Transfer to stock pot with shredded carrot, bay leaves, salt, tomatoes, and stock. Brown ground beef and add to pot. Bring to a boil, then simmer for a while - the flavours improve with time. Serve with grain of your choice and/or fresh bread.
