Ingredients
3/4 cup chickpea flour
3/4 cup water
1/2t kosher salt
3T olive oil
Directions
In a medium bowl, mix chickpea flour, water, salt, and 1T olive oil. Allow to stand for about 2 hours. Place cast-iron pan on a rack on the second-highest shelf in oven and start broiler. After 3-5 minutes of heating, add remaining 2T olive oil to pan and swirl to coat. Pour in batter and swirl around like a crepe. Cook for 5 minutes, then check - should be set and lightly browned on top, but not burnt.
Notes
This was super bland. Okay as a base for a focaccia-type dish, or might be good with some garlic added?
