Mr. Thai Chicken Satays

Ingredients

2kg chicken breast, sliced into thick strips (try thighs next time)
10g salt (original 20g)
60g sugar (original 40g)
1T cornstarch
1T vegetable oil
2t turmeric
1/2 cup water
(original 1t black pepper, but try omitting)

Directions

Mix all seasonings and water, then add chicken and turn to coat. Marinate for at least 1 hour before cooking. Quickly grill on barbecue.

Chow Mein

Ingredients

Sauce:
6 Tbsp oyster sauce or 2 Tbsp hoisin
1/4 cup tamari
1/4 cup sesame oil
1/2 cup water or stock
1 Tbsp brown sugar
1 Tbsp cornstarch

Mix-ins:
2 boxes spaghetti or linguine
Grilled chicken or golden tofu
Head of broccoli
2 sweet onions
3 ribs celery
Handful of shiitakes

Directions

Cook pasta. Steam broccoli over pasta water. Mix together sauce ingredients and set aside. Brown onions & celery, slice protein and mushrooms and add to aromatics until hot. Mix all ingredients together, then fold in sauce. Heat through and serve!
