Ingredients
3-4 Overripe bananas
1/4 + 1/4 cup melted butter
1/3 cup honey
1/3 cup honey
1 egg
1 t vanilla
230g (1 3/4 cup) oat flour
1 t baking powder
1 t baking soda
1/2 t kosher salt
1 T psyllium fibre
Directions
Preheat oven to 350'. Brush loaf pan with 1/4 cup melted butter. Mix together wet ingredients, making sure to thoroughly squish bananas. Add dry ingredients and mix until well-blended. Pour into prepared loaf pan and bake for 40 minutes.
