Lime and Soy-Glazed Chicken with Cabbage Slaw

Ingredients

3 T brown sugar
2 T soy sauce
3 + 3 T lime juice
2.5 - 3lbs skin-on chicken pieces
1/4 head red cabbage, shredded
2 large carrots, grated
4 scallions, thinly sliced
1/2 cup chopped mint leaves
1 T minced fresh ginger
2 T sesame oil
1/2 t kosher salt
1/2 t ground pepper

Directions

Preheat oven to 400'. In a 9-13" baking dish, mix together brown sugar, soy sauce, and 3T lime juice. Stir and add chicken. Roast, skin-side down, for 20 minutes; flip and roast 30 minutes more.

Toss cabbage, carrot, onions, ginger, mint, sesame oil, 3T lime juice, and salt & pepper.
