Ingredients
1 T soy sauce
2 t dry sherry, white wine, or tequila
2 t cornstarch
12 oz lean pork, cut into thin slices
2 T vegetable oil
2 cloves garlic, minced
1 inch fresh ginger, grated
1-2 chiles, thinly sliced
8 oz broccoli, broccolini, snow peas, or similar
2 medium carrots, julienned (about 1.25 cups)
4 scallions or half an onion, sliced thin
rice or noodles
Directions
Whisk together soy sauce, wine, and cornstarch. Add pork, stir, and marinate at least 10 min.
Cook rice or noodles.
Preheat wok over medium heat until very hot (about 2 min); add 1 T oil and swirl to coat. Cook garlic, ginger, and chile about 10 seconds; add pork in single layer. Sear 1 minute, then toss and turn until golden on all sides and cooked through, about another minute. Remove pork and aromatics to a plate.
Add 1 T oil, swirl to coat. Stir-fry greens about 1 minute, push up the side of the wok. Add carrots and onions and stir-fry 1-2 minutes. Mix greens back in, then add pork mixture back in (including juices). Cook another 30 seconds. Serve atop rice/noodles.
