GF Banana Crunch Muffins

Ingredients

2 cups GF flour (350 grams)
1 t salt
1 t xanthan gum
1.5 t baking soda
1 cup (75g) sweetened, shredded coconut

.5 cup butter
.5 cup sugar
2 eggs
1 t vanilla
2 large, overripe bananas
.5 cup buttermilk

Directions

Preheat oven to 375'.  In small bowl, whisk dry ingredients. In Mixmaster, cream butter & sugar for one minute. Blend in eggs.  Add vanilla, bananas, and buttermilk, and beat on medium-high for one minute.  Fold in dry ingredients. Scoop into ~15 muffin cups, sprinkle with extra sweetened coconut, and bake for 20 minutes, until golden brown on top.
