Almond Flour Bread

Ingredients

1 1/4 cups milk
1/4 cup vegetable oil
1 t apple cider vinegar
2 eggs
2 egg whites (1/4 cup)

55 g potato starch
140 g tapioca starch
100 g brown rice flour
140 g almond flour
45 g granulated sugar
2 1/2 t xanthan gum
1 T psyllium fibre
1 1/2 t salt
1 T YEAST!

Directions

Set bread machine to gluten-free, dark crust setting. REMEMBER TO PRESS START! 

Measure and pour milk, oil, and vinegar into bread pan. Use same measuring cup to measure eggs & whites, pour into pan.

Add dry ingredients in order.

As soon as bread is done, remove from pan and cool on a wire rack.

Chicken Satays

Ingredients

1/4 cup tamari
1/4 cup packed brown sugar
1 T chili paste
1.5 T lime juice
1.5 T fish sauce
1 t dried basil
1/2 t ground ginger
1/2 t garlic powder
1/2 t turmeric

3 T vegetable oil

3 T water
3 T peanut butter

Directions

Mix first 9 ingredients in a measuring cup. Pour half into marinating container and whisk in vegetable oil. Add chicken strips and marinate as long as possible - preferably overnight.

Pour other half into small saucepan and add 3 T water. Bring to a simmer and boil down a bit. Remove from heat and whisk in peanut butter. Allow to cool.

Grill marinated chicken on the barbecue for 3 minutes/side, or bake at 350' for approx. 15 minutes, or pan-fry for 3 minutes/side.
