Ingredients
2 cups white sugar
.5 + 1.5 cups water
2t vanilla
Directions
Add sugar and half cup water to pot. Bring to a vigorous boil and keep it there until caramel smell is noticeable and the liquid is a nice amber colour. Remove from heat and VERY CAREFULLY add remaining water. It will spatter! Whisk until blended, then allow to cool partially. Whisk in vanilla, then allow to finish cooling. Decant into bottle.
