Gingerbread (GF)

Ingredients

1 cup molasses
6T unsalted butter
1/2 cup buttermilk
1 egg
325g GF flour blend
1t xanthan gum
1.5t baking soda
1.5t ginger
.5t salt

Directions

Preheat oven to 325'.

In a medium glass bowl, microwave butter and molasses together on 50% power for about 3 minutes, stirring each minute, until butter has completely melted. Whisk in buttermilk, then egg.

Meanwhile, whisk together dry ingredients. Pour wet into dry, then whisk until well-blended. Pour into 8x8 pan, lined with parchment. Bake for 30 minutes.
