GF White Sandwich Bread

Ingredients

1.5 cups warm water
2 eggs
.25 cup honey
.25 cup vegetable oil
3 cups (438) GF flour
1T yeast
1T psyllium husk powder
1t baking powder
1t salt

Directions

Add ingredients to bread machine in order listed. Bake on GF dark crust setting.

Smitten Kitchen Buttermilk Roast Chicken

Ingredients

Chicken pieces (do not halve chicken breasts as they will dry out)
2 cups buttermilk
5 garlic cloves, pressed
1T salt
1T white sugar
2t paprika
lots of freshly ground black pepper

Directions

Combine ingredients and coat chicken; leave to marinate in fridge for 2-48 hours.

Preheat oven to 425'. Line a cookie sheet with foil and arrange pieces with some space between. Bake for ~30 minutes.

GF Carrot Cake

 Ingredients

12.5 oz ATK flour blend
1.25t baking powder
1t baking soda
.5t salt
1.25t ground cinnamon
.5t ground nutmeg
.125t ground cloves
1 lb carrots, peeled and grated/shredded
7oz brown sugar
7oz white sugar
4 large eggs
.75c vegetable oil

Directions

Preheat oven to 350'. Blend dry ingredients in a medium bowl. Grate or shred carrots. Beat eggs and sugar for a minute until well-blended, then drizzle in oil and blend for another minute. Fold in dry ingredients and carrots. Evenly divide between two cake pans and bake for 40 minutes.

Frost with cream cheese frosting.

Baked Potatoes

Preheat the oven to 400˚F. Scrub the potatoes clean and dry them, then prick them all over with a fork.

Place the potatoes on a baking sheet. Rub them all over with the canola oil and bake until they are cooked thoroughly and soft in the center, about 1 hour.

Asian Sesame Slaw

 Ingredients

1 bag broccoli slaw or coleslaw
1T sesame oil
1T rice vinegar
1t sugar
1/2t salt
1/4c sliced green onions

Directions

Combine all ingredients. Make ahead of time if possible.

Teriyaki Sauce

Ingredients

1/2 cup tamari
1/4 cup brown sugar
2t fresh ginger
2 cloves garlic, smushed
1T maple syrup or honey
1t sesame oil
3T mirin
1/4 cup water with 1T cornstarch or tapioca starch

Directions

Combine all ingredients in small saucepan and bring to a boil. Simmer for five minutes.

Teriyaki Chicken Burgers/Meatballs

 Ingredients

2 lbs ground chicken
.5 cup teriyaki sauce
1t powdered garlic
1t salt
(original recipe calls for 1 cup panko, but the texture wasn't great - try without)
(try adding thinly sliced green onions)

Directions

Mix all ingredients in a large bowl. Pan-fry in vegetable oil, smashing them down so they are thin. If needed, finish cooking in oven set to 375'.

Suggested companion: Asian slaw, coconut rice.
