Ingredients
1 lb ground lamb
1.5 cups panko
2 cloves crushed garlic
1 t minced fresh rosemary
1 egg
1/2 t coarse salt
Directions
Mix together all ingredients and form into flat meatballs. Heat some olive oil over medium-low heat and fry the meatballs for 2-3 minutes per side.
Nice served with rosemary roasted potatoes and carrots.

Peanut Chicken Strips
Ingredients
1/2 cup peanuts, finely chopped (use Cuisinart)
3/4 cup panko
1/4 cup chopped cilantro or parsley
1 lb chicken breast, sliced into thin strips
3 T canola oil
Directions
Mix peanuts, panko, and herbs; roll chicken in the mixture. Heat oil over medium heat and fry the strips for 2-3 minutes per side. Strips can be kept warm in a 200' oven, as they won't all fit in the pan at once.
Serve with rice, veggies, and dipping sauce - sweet & sour, plum sauce, or garlic-chili sauce (can be mixed with 1/2 cup mayonnaise).
