Ingredients
4 cups cucumbers, diced
4 cups onions, diced
4 cups tomatoes, diced
2 bell peppers, diced
3 cups white sugar
2 cups white vinegar (reserve .5 cup)
1 tsp salt
1 tsp celery seed
1.5 tsp turmeric
1.5 tsp dry mustard
Directions
Sprinkle the cucumbers and onions with salt and let stand one hour. Drain excess liquid and add remaining ingredients. Bring to a boil, then simmer for about 30 minutes. Mix remaining half cup of vinegar with cornstarch and add to the relish; cook another 5 minutes.
