Chocolate Buttercream Frosting

 Ingredients

1 cup (2 sticks) unsalted butter, softened
.5 cup cocoa powder
3T heavy cream
2t vanilla extract
1/4t salt
3.5 cups powdered sugar

Directions

Make sure butter is well-softened. Whip with Mixmaster on medium speed for about 2 minutes, until creamy. Add cocoa, cream, vanilla, and salt, and blend in. Add sugar, .5 cup at a time, until all is blended in. Whip at medium-high speed until light and fluffy.

Chickpea Flour Pancake (Cacio e Pepe Farinata)

Ingredients

3/4 cup chickpea flour
3/4 cup water
1/2t kosher salt
3T olive oil

Directions

In a medium bowl, mix chickpea flour, water, salt, and 1T olive oil. Allow to stand for about 2 hours. Place cast-iron pan on a rack on the second-highest shelf in oven and start broiler. After 3-5 minutes of heating, add remaining 2T olive oil to pan and swirl to coat. Pour in batter and swirl around like a crepe. Cook for 5 minutes, then check - should be set and lightly browned on top, but not burnt.

Notes

This was super bland. Okay as a base for a focaccia-type dish, or might be good with some garlic added?

Homemade Maple Cheerios

Ingredients

1/4 cup brown sugar
1/4 cup maple syrup
1T unsalted butter
1/4t fine salt
4-6 cups plain Cheerios

Directions

Preheat oven to 350'.
Microwave first four ingredients in a covered glass bowl for 2-3 minutes, until hot and butter is fully melted. Stir in Cheerios. Spread on parchment-lined baking sheet and bake for 5 minutes.
