Hawaiian Chicken

Ingredients

1 lb chicken breasts, cut into strips
2 egg whites
1 t kosher salt
4 t cornstarch
1 can pineapple juice, drained (save 1/2 cup juice)
1/2 cup white vinegar
1/2 cup ketchup
1 t kosher salt
3 T brown sugar

4 t grated fresh ginger
1 T + 1 t vegetable oil
1 bell pepper, cut into strips

1/2 sweet onion, cut into slices
Directions

Mix chicken pieces, cornstarch, salt, and egg white. Refrigerate for at least 15 minutes. Whisk together the pineapple juice, vinegar, ketchup, ginger, salt, and sugar. Heat the 1 T of oil over high heat. Add the chicken and sear for one minute; flip and sear on the other side for another minute. Remove chicken to a plate; add 1 t of oil, then peppers, pineapple, and onions. Saute for a minute, then add sauce. Once the sauce is simmering, add chicken back in. Cook, stirring, until chicken is cooked through. Serve with rice.
