Ingredients
1 cup yellow split peas, soaked in water for an hour
1 large tomato (~8oz), cut into 8 wedges
1/4 c canola oil
1 medium red onion, finely chopped (~1.5 c)
5 large garlic cloves, minced
1/2 t cumin1 t coriander
3/4 t turmeric
1/2 cayenne (save to the end if serving to kids)
1/4 cup minced cilantro
1 t u/s butter
1 t salt
Directions
Drain the dal and return to saucepan. Add 3 cups water and the tomato wedges. Bring to a boil, reduce to a simmer and cook for 1 hour. Pick out tomato skins and whisk dal to emulsify it. Keep warm over very low heat.
Heat the oil over medium heat and saute the onions for 3 min. Add the garlic and saute 2 more min. Add the spices, stir, and pour over dal. Stir cilantro and butter into dal, and stir until butter is melted.
