GF Apple Cinnamon Crumble Muffins

Ingredients

Crumb Topping

67g brown sugar
15g white sugar
1t cinnamon
1/4c butter, melted
84g GF flour

Muffins

5-6 apples, shredded on box grater
1/2 cup softened butter
100g brown sugar
50g white sugar
2 large eggs, at room temperature
120g yogurt, at room temperature
2t vanilla

220g GF flour
1t baking soda
1t baking powder
3/4t xanthan gum
1t cinnamon
1/2t salt
1/4c milk, at room temperature

Directions

Preheat oven to 425'. Whisk together crumb topping, set aside.

In Mixmaster with whisk attachment, blend butter and sugars until light and creamy. Add eggs, yogurt, and vanilla, and beat at medium-high speed for 2 minutes. Meanwhile, whisk together dry ingredients. Add to wet mixture along with milk, then apple, and whisk until well-blended. Scoop into 24 muffin cups and top with crumble mixture.

Bake at 425' for five minutes, then lower temperature to 350' and bake for another 15-20 minutes.
